Slow-Cooker Indian Chicken (Aldi-Friendly & Gluten-Free)

General Notes: Remember the first time you had Indian food? It was like a whole new food world opened up. I love it, but I also love shopping at Aldi, and most of the needed ingredients for a traditional curry recipe are not carried there. But about a month ago I noticed that my Aldi is now carrying curry powder. Sweet! So I set out to make an Aldi dump meal Indian Chicken Dish!

Note: this did not turn out creamy like a traditional curry dish. Since Aldi does not carry coconut milk, I used coconut oil instead. I got the flavor I was looking for, but not the creaminess you would expect from a traditional curry dish. It was still VERY good, just different. Next time I’m going to try adding some heavy cream to it and see how that turns out!

Aldi-Friendly: All the ingredients listed can be found at Aldi, and I have listed them by their Aldi brand names. You can, of course find these ingredients in most other stores if you do not have an Aldi!

Gluten-Free Directions: Nix the Naan bread and you’re good to go!

Freezer Directions: This is a great freezer dump meal. Put all the ingredients in a gallon zip-lock bag and freeze (Chicken last, you want the chicken to be first when you pour into the slow-cooker.) Kid Approval: I think my kids could take or leave this one, but I think it’s important to broaden their pallets. They ate it without complaint, but they didn’t gulp it down or ask for seconds.

Slow-Cooker Indian Chicken (Aldi-Friendly & Gluten-Free)

Prep Time: 10 mins          Cook Time: 4 hours          Total Time: 4  hours          Servings: 4-6

Ingredients:

1.5 lbs Chicken Breast, cubed
2 TBS Simply Nature Coconut Oil
6oz Happy Harvest Tomato Paste
3 TSP Stonemill Essentials Yellow Curry Powder
1/2 TSP Salt

Instructions:

  1. Place everything in slow-cooker.
  2. Cook on high for 3.5 – 4 hours (until chicken is cooked through)
  3. Serve with rice & Specialty Selected Naan Bread
