General Notes: Chipotle makes the best tacos, hands down. One of the things I love about their tacos is the meat is cubed instead of shredded. For some reason I like the texture better. So that’s what I did with this taco recipe. Also, I intended to put in a packet of taco seasoning, but I forgot. Oooops. Turns out, these were great without the seasoning! The flavor of the salsa cooking with the meat gave it it just the right about of kick! I wouldn’t say this is a Chipotle Copycat, but it definitely gave me a lot of the same happy food feelings I get when I eat there!
Aldi-Friendly: All the ingredients listed can be found at Aldi! You can probably find a similar salsa at other stores if you don’t have an Aldi near you.
Gluten-Free Directions: Use corn tortillas or serve over rice to make this meal 100% gluten-free!
Freezer Directions: This is a great freezer-dump meal. Put chicken, salsa and corn into a gallon zip-lock bag and freeze (Chicken last, you want the chicken to be first when you pour into the slow-cooker.) Defrost in the fridge 24-48 hours before serving day and dump into the slow-cooker.

8 oz Season’s Choice Super Sweet Whole Kernal Corn (Frozen)
Mission 8″ Homesytle Flour Tortillas (10 ct)
Happy Farms Shredded Cheese, Mexican (12oz)
Friendly Farms Sour Cream
Tomatoes on the Vine
- Place Chicken, salsa, and corn in slow-cooker.
- Cook on high for 3.5 – 4 hours (until chicken is cooked through)
- Serve in tortillas with optional toppings.
- Serve with rice.
