Some people like meatloaf. This recipe is for the rest of us!
There are so many things I love about this recipe! For one, you can find all the ingredients at Aldi! Score! (If you like shopping at Aldi, stick around because I will be adding more Aldi friendly recipes and menus!)
Secondly, it tastes good! Confession time: I have never liked meatloaf. My mom didn’t like it either, but for some reason she made it at least a few times a month. In hindsight, it was probably because meatloaf is a great way to make ground beef stretch!
When I got older, I discovered the reason I didn’t care much for this American staple: KETCHUP! Blech! So I experimented and came up with a recipe that I actually liked!
But there was still one problem. Meatloaf takes FOREVER to cook! who has time to wait an hour for dinner with a busy family schedule?
So I put my tasty recipe in a pan and . . . voila! Best. Meatloaf. Ever! And in half the time! My family devoured them. I have to double the recipe now or there will be mutiny!
Guess what I discovered in the process? Kids LOVE eating food made into muffins! Even the pickiest toddler is willing to give something a try if it looks like a muffin! I’ve been trying lots of different foods in the muffin pan, and I’ll be sharing those with you soon too!
This has become one of my favorite go to meals to take to new moms or people who are sick. It’s delicious comfort food, it’s easy to make and transport, and there’s a pretty good chance all of their children will actually eat it! Winning all around!
My husband recently brought some leftovers to work with him for lunch. He was invited to sit at the cool table. Just sayin’.
Meatloaf Cupcakes (Aldi Friendly!)
Prep Time: 15 mins Cook Time: 30 mins Total Time: 45 mins Servings: 6 – 8
1.5 lbs Ground Beef (80/20)
½ onion, chopped finely
1 bell pepper, chopped finely
1/2 loaf wheat sandwich bread, crumbled
3 Tbs Stonemill Essentials Steak Seasoning (more or less to taste)
1/2 Tbs Worcestershire Sauce
Potatoes, mashed and seasoned to taste
Shredded Cheddar (Optional)
Bacon Crumbles (Optional)
- Preheat Oven to 350
- Mix ground beef, onion, bell peppers, bread crumbles, seasoning & Worcestershire Sauce
- Form mix into balls and place them in an ungreased muffin pan
- Bake for 25 – 30 minutes (until cooked all the way through)
- Top with mashed potatoes and gravy, or cheddar cheese & Bacon crumbles
